For the Cinnamon Tea

1 The Curried Spirits Ceylon Cinnamon Quill
(Our regular quills are 1.7 inches long. Use half of this quill for this recipe) - 2 cups water
Optional Additions
- 1–2 tsp honey or palm sugar
- A small slice of fresh ginger
- A squeeze of lemon
Method
- Break the cinnamon: Lightly break the cinnamon quill into 2–3 pieces. This helps release more flavor during simmering.
- Simmer: Add cinnamon and water to a small pot and bring to a gentle boil. Reduce heat and simmer for 8–10 minutes until the tea turns a light amber color.
- Steep: Turn off the heat and allow the cinnamon to steep for another 3–5 minutes for deeper flavor.
- Serve: Strain into cups and add honey or lemon if desired.
Strength Guide
You can adjust the intensity of cinnamon flavor depending on how strong you like your tea.
Light: ½ cinnamon quill simmered for 6–8 minutes
Standard: 1 cinnamon quill simmered for 8–10 minutes
Strong: 1 cinnamon quill simmered for 12–15 minutes

- Use Ceylon cinnamon quills, not cassia sticks, for a softer and naturally sweet tea.
- Breaking the quill helps release more essential oils.
- The same cinnamon quill can often be reused for a second steep.
- For a brighter flavor, add a squeeze of lemon just before serving.
