Prep: 2 mins | Cook: 10 mins | Total: 12 mins | Yield: 2 cups

A warm, comforting tea made from true Ceylon cinnamon quills. Naturally sweet, lightly spiced, and deeply aromatic, this simple infusion highlights the gentle complexity of cinnamon without needing much else. At The Curried Spirits, our cinnamon quills come from Sri Lanka — thin, delicate layers that release a soft sweetness when steeped slowly in hot water.

Ingredients

For the Cinnamon Tea

Optional Additions

  • 1–2 tsp honey or palm sugar
  • A small slice of fresh ginger
  • A squeeze of lemon

Method

  1. Break the cinnamon: Lightly break the cinnamon quill into 2–3 pieces. This helps release more flavor during simmering.
  2. Simmer: Add cinnamon and water to a small pot and bring to a gentle boil. Reduce heat and simmer for 8–10 minutes until the tea turns a light amber color.
  3. Steep: Turn off the heat and allow the cinnamon to steep for another 3–5 minutes for deeper flavor.
  4. Serve: Strain into cups and add honey or lemon if desired.

Strength Guide

You can adjust the intensity of cinnamon flavor depending on how strong you like your tea.

Light: ½ cinnamon quill simmered for 6–8 minutes

Standard: 1 cinnamon quill simmered for 8–10 minutes

Strong: 1 cinnamon quill simmered for 12–15 minutes

Tips for Best Flavor

  • Use Ceylon cinnamon quills, not cassia sticks, for a softer and naturally sweet tea.
  • Breaking the quill helps release more essential oils.
  • The same cinnamon quill can often be reused for a second steep.
  • For a brighter flavor, add a squeeze of lemon just before serving.

Why Use Cinnamon Quills?

Whole quills preserve cinnamon's natural oils and aroma far better than pre-ground spice. Using The Curried Spirits Ceylon Cinnamon Quills gives you true Ceylon cinnamon from Sri Lanka with a naturally sweet, delicate flavor and pure spice with no additives.

Simple. Fragrant. Comforting.

I’ve tried a variety of their spices, and now my curries are incomplete without Curried Spirits blends. Cardamom is my personal favorite! I recently made Tangdi Kabab for a party, and it turned out to be the star dish of the evening. Every spice I used was from Curried Spirits, and the quality truly shows in the flavor.

    Spices used for Tangdi kabab
    Cardamom
    Pepper
    Cloves
    Cinnamon
